From Backyard Smoke to Our First Storefront


At T-BIRDS, the “T” stands for Turkey and Thunderbird — honoring both the brand’s singular focus on smoked turkey wings and founders Ollie Banks' late grandfather’s iconic 1956 Thunderbird.


What began as a backyard pursuit of the perfect bite evolved into a mobile food trailer that built a loyal following across Southeastern Wisconsin. Today, T-BIRDS is preparing to open its first brick-and-mortar location, marking the next chapter of a concept built on craft, consistency, and no shortcuts.


While the T-BIRDS trailer will still appear at select events for exposure and community connection, the brand’s primary focus will now be centered on creating a permanent home where guests can reliably experience T-BIRDS year-round.
